On the initial subject (well, the secondary subject actually as all this has nothing to do with NZPhoenix), how can swapping "re" for "er" be an improvement for words like theatre, metre and centre?

The words "spanner" and "twitchel" are fully taken out in American English, and remplaced with something else, not to say that American English also uses the most pesky subjunctive way way more often than British English.

Because you pronounce it like 'theater'. It's better if the spelling and pronunciation go hand in hand rather than diverge.
